Freshly caught and regional onto your plate
The source of life literally flows through the pools of our own fish farm at Tschangelair alpine pasture. Crystal-clear, cold, oxygen-rich mountain water from the Stubai massif provides our char, rainbow and salmon trout with the best conditions for healthy, natural growth. Because only the best water quality, like the one in our spring water ponds, makes perfect fish quality possible. At one of the highest located fish farms in the Alps, we take plenty of time to rear our fish with much passion.

Spring
The annual rhythm of our fish breeding in Stubai begins every year with the spring cleaning for our senior chef Werner. The spring water ponds are emptied, cleaned and then freshly filled again.
Summer
In summer, species-appropriate feeding and care of the trout and char as well as regularly checking the water quality are the tasks on hand. In our fish farm at 1,410 m altitude, the flowing water keeps its purity and constant low temperature even in summer. Just the way our alpine fish like it. We make sure to farm our fish to suit the requirements of each individual species, and this of course also includes feeding.
Autumn & Winter
In late autumn our fish are categorised by size and transferred into separate pools, so that we can adjust the feed quantity accordingly. In mid-October, the char is then hand stripped. Thanks to the supply of spring water, our ponds do not freeze over even in the deep of winter.
